I highly recommend Scott Kelby's Photoshop CS5 Book for Digital Photographers & his series of Digital Photography books Volumes 1,2 & 3. And his latest book for Elements users is really good too, he gets right to the point in all of this books + the info's easy to follow & techniques are well illustrated too.
The Dummys series of books are good too. And students are elegible for discounts on photoshop & digital photography books from publishers such as Peachpit & O'Reilly.
